Zonqor Point Salt Pans
Zonqor Point Salt Pans is one of the many areas in the Maltese Islands covered with saline - flat pools carved in soft limestone, in which salt is produced from sea water. Extensive expanses of flat rock are divided into many smaller reservoirs with a depth of several centimeters. Rock salinas are one of the more characteristic landscape attractions of Malta and Gozo.
The natural technique for producing salt is to evaporate water and gradually increase the concentration of brine until white sodium chloride crystals begin to precipitate. Salt is manually collected for further processing, primarily purification.
The technology of producing salt from sea water has been known since the earliest times. The most valuable salt obtained in this way is the so-called salt flower, i.e. salt crystallizing in fanciful patterns on the water surface. The flower does not require purification, it is suitable for direct consumption.
