Gaillac is a town known primarily for viticulture and wine production. There is also a medieval Benedictine abbey.

Gaillac's area was already inhabited in Roman times. This is evidenced by the excavations during which the remains of villas and other buildings from this period were discovered. The first medieval records of the village date back to the beginning of the 9th century, when a Benedictine abbey was established here. The monks were involved not only in praying and rewriting books, but also, and perhaps above all, the cultivation of vines. Gaillac's wine career began with them.

Today's Gaillac is a picturesque little town surrounded by vineyards. Some of them open their doors to tourists and can be visited. The surrounding area is a separate wine region with its own wine appellation. Its attractions also include medieval buildings. In Gaillac you can visit the Abbey of St. Michael, whose origins date back to the 9th century. Currently, the oldest of the local buildings are Romanesque and were built in the 13th century. Apart from him, there is also a 13th century tower in the town, the Gothic church of St. Peter and many fourteenth and fifteenth century houses.
